Every Kid's Favorite Recipe: Rainbow Sprinkle Bread

Every summer at our Colors of Fun Baking Camp the kids unanimously deem Rainbow Sprinkle Bread as the best recipe of the week. That's saying a lot considering colorful cookies and cupcakes are also recipes at this camp. What makes it so special? In my opinion, it's because it tastes like a Funfetti Loaf Cake or Birthday Cake Pound Cake - sweet, yet without a lot of over-powering frosting. But, you be the judge. Make it at home and decide for yourself why it is such a hit. Read on for the full Rainbow Sprinkle Bread recipe steps!

Rainbow Sprinkle Bread

Makes 1 (9 x 5-inch) loaf or 8 (2 x 3.5-inch) mini loaves


Gather these ingredients to get started on your sweet creation that tastes nothing like bread and more like Funfetti Loaf Cake, or Birthday Cake Pound Cake. Hey, maybe we should rename it!


Bread Ingredients

  • 1 cup unsalted butter, softened

  • 1 ½ cups granulated sugar

  • 4 large eggs

  • 1 large egg yolk

  • 1 tablespoon vanilla extract

  • 2 cups all-purpose flour

  • ½ teaspoon salt

  • ⅓ cup rainbow sprinkles


Crumble Topping Ingredients

  • ¼ cup all-purpose flour

  • ¼ cup granulated sugar

  • ⅛ teaspoon salt

  • 2 tablespoons cold unsalted butter, cubed

  • ½ teaspoon vanilla extract

  • ⅓ cup rainbow sprinkles


Instructions:


  1. Set oven to 325°F (165°C). While it heats up, spray your loaf pan(s) heavily with non-stick spray to guarantee a clean release after baking.

  2. Using a stand mixer with a paddle attachment, beat the softened butter and sugar at medium speed until fluffy. Expect this to take around 3 to 4 minutes; it should look light and airy.

  3. Gradually beat in the eggs and egg yolk, one at a time, mixing well after each addition. Then, beat in the vanilla extract until well combined.

  4. Reduce the mixer speed to low. Slowly add the flour and salt, mixing until just combined. Avoid overmixing.

  5. Gently fold in the rainbow sprinkles. Jimmies or confetti style sprinkles work best.

  6. Transfer the batter into your prepared loaf pan(s), spreading it evenly.

  7. Make the crumble topping by whisking together the flour, sugar, and salt. Use your fingers to work in the cold butter until the mixture resembles coarse sand. Stir in the vanilla and rainbow sprinkles until pebble-like crumb pieces form. Distribute crumble evenly over the top of the batter in the loaf pan(s).

  8. Place your full size loaf or mini loaves in the oven. Mini loaf pans will generally require 15-20 minutes to bake, while a full size loaf may take anywhere from 45-60 minutes. Check for doneness with a toothpick—if it comes out clean, it’s ready!

  9. Allow the bread to cool in the pan for about 10 minutes. Carefully transfer it to a wire rack to cool completely.
