Mini Naked Layer Cakes

Naked layer cakes are all the rage these days, with different styles and variations showing up on Pinterest and Instagram. I spent some time over New Year's weekend making a naked layer cake in a mini version, which would work best for our kids baking classes. Check it out below and we hope to incorporate these into our classes soon!

Chocolate Strawberry Mini Naked Layer Cakes


Ingredients:

-Chocolate box cake mix and the ingredients it requires (box mix hacks are welcome)

-Strawberry buttercream (use a basic vanilla American buttercream recipe and stir in 1/2 cup or more pulverized freeze-dried strawberries)

-Sprinkles and decorations (I used some I found at Target plus Jolly Rancher lollipops)


Tools you'll need:

-9x13 pan

-Bread knife

-2.75 inch cookie cutter with flat edge (2.5 or 3 inch will work too)

-Piping bag

-Piping tip (I used Wilton 32 but any tip will work)

-Disposable mini cake stands, optional


Directions:

  1. Make the chocolate cake according to the box directions and pour it into a 9x13 pan. Heavily spray the pan with non-stick spray first. I mean, heavily. Once cooled completely, remove from it from the pan. Level off the top of the cake with a bread knife to make it flat.

  2. Use the cookie cutter to cut out 8 circles. Use the bread knife to cut each circle in half.

  3. Make the buttercream and place it in a piping bag. Pipe frosting onto a cake circle making sure to stay away from the edge. Place another cake circle on top making sure not to push down too hard. Pipe frosting onto the top of the top cake circle in any pattern or style desired and garnish with sprinkles.
