Summer Strawberry Shortcake Cookies

We made these with kids ages 5-7 at summer baking camp and they loved them!


Makes 30-40 cookies

Ingredients: 10 tablespoons butter, softened 4 ounces cream cheese, softened 1 cup sugar 1 egg 1 tsp vanilla 2 cups all-purpose flour 1⁄2 teaspoon baking powder 1⁄2 teaspoon salt 1⁄4 teaspoon baking soda 1 cup white chocolate morsels 3/4 to 1 cup fresh strawberries, diced small

Directions: 1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside. 2. Using an electric mixer, cream together butter and cream cheese. 3. Once creamed, add in the sugar, egg and vanilla and mix until blended. 4. Turn off the mixer. Sprinkle the flour, baking powder, salt, and baking soda over the cream cheese mixture. 5. Using a rubber spatula, work in the flour and other dry ingredients until a dough forms. 6. Fold in the white chocolate morsels and strawberries. 7. Using a mini cookie scoop or tablespoon, drop cookie dough on prepared baking sheet. 8. Bake for 12 to 14 minutes, or until golden brown on top. Transfer cookies to a cooling rack to cool completely.
