Recipes to Make with Kids: Rainbow Sprinkle Bread

Every summer at our Colors of Fun Baking Camp, the kids unanimously choose Rainbow Sprinkle Bread as the standout recipe of the week. That’s significant, considering the other recipes include colorful cookies, cupcakes, and charcuterie boxes.
So, what makes this Rainbow Sprinkle Bread so special? In my opinion, it’s the birthday cake flavor and the crumble topping. It tastes like a slice of Funfetti Pound Cake and you never miss any frosting or glaze. But don’t take my word for it. Make it at home with your kids and taste for yourself!

Rainbow Sprinkle Bread
Makes 1 (9 x 5-inch) loaf or 8 (2 x 3.5-inch) mini loaves
Bread Ingredients
1 cup unsalted butter, softened
1 ½ cups granulated sugar
4 large eggs
1 large egg yolk
1 tablespoon vanilla extract
2 cups all-purpose flour
½ teaspoon salt
⅓ cup rainbow sprinkles
Crumble Topping Ingredients
¼ cup all-purpose flour
¼ cup granulated sugar
⅛ teaspoon salt
2 tablespoons cold unsalted butter, cubed
½ teaspoon vanilla extract
⅓ cup rainbow sprinkles
Step-by-Step Instructions
Preheat the Oven
Set your oven to 325°F (165°C). While it heats up, generously spray your loaf pan(s) with non-stick spray to ensure easy release after baking.
Prepare the Batter
Using a stand mixer with a paddle attachment, beat the softened butter and sugar. Do this at medium speed until the mixture is fluffy. This should take about 3 to 4 minutes. It will look light and airy.
Incorporate Eggs and Vanilla
Gradually beat in the eggs and egg yolk, one at a time. Make sure to mix well after each addition. Then, mix in the vanilla extract until everything is well combined.
Mix in Dry Ingredients
Lower the mixer speed to low. Slowly add in the flour and salt, mixing until just combined. Be careful not to overmix.
Add the Sprinkles
Gently fold in the rainbow sprinkles. For best results, use jimmies or confetti-style sprinkles.
Transfer the Batter
Pour the batter into your prepared loaf pan(s). Spread it evenly.
Make the Crumble Topping
In a separate bowl, whisk together flour, sugar, and salt for the topping. Use your fingers to work in the cold butter until it resembles coarse sand. Stir in the vanilla and rainbow sprinkles until crumb pieces form. Evenly distribute this crumble over the top of the batter in the loaf pan(s).
Bake the Bread
Place your full-size loaf or mini loaves in the oven. Mini loaf pans usually require 15-20 minutes to bake. A full-size loaf may take anywhere from 45-60 minutes. To check for doneness, insert a toothpick—if it comes out clean, it’s ready!
Cool the Bread
Allow the bread to cool in the pan for about 10 minutes. Then carefully transfer it to a wire rack to cool completely.
