Itty Bitty Bakers - Recipe of the Month

Recipe share on an open cookbook with eggs, spoon, whisk, and rolling pin on blue and red cloths.

Hi friends!

Our October Recipe of the Month is Mini Biscoff Pumpkin Cheesecakes! With real pumpkin purée and a buttery Biscoff cookie crust, these individual treats bring a little fall fun to the kitchen.

I chose this recipe because it gives kids an opportunity to bake with—and taste—actual pumpkin. Pumpkin contributes nutrients such as vitamin A and fiber, so it brings more than seasonal flavor to this sweet treat.

There are plenty of jobs for little hands along the way: crushing cookies, measuring ingredients, pressing the crust into liners, mixing the filling, and adding toppings before serving. With an adult helping with the mixer and oven, kids can practice following directions and learn how individual ingredients come together to make something delicious.

As a dietitian and the founder of Itty Bitty Bakers, I love recipes that bring food exploration and baking skills together. This month’s recipe gives families a chance to learn, have fun in the kitchen, and enjoy a homemade fall dessert!

Happy Baking!
