These simple peanut butter cookies are so soft and delicious! Kids can help with each step in the recipe, but will particularly like cracking the egg and making the criss-cross pattern.
Recipe

Ingredients: 1 egg 1 cup granulated sugar 1 cup minus 2 tablespoons peanut butter Splash of vanilla (optional)
Directions:
Preheat oven to 350 degrees. Line cookie sheet with parchment paper or silicone baking mat.
Stir all ingredients together until well blended.
Use a small cookie scoop to transfer dough onto cookie sheet, spacing 2 inches apart.
Use a fork to make a criss-cross pattern to push down and flatten cookies.
Bake for 12 min. Let cool for 1-2 min before transferring to a cooling rack to cool completely.
Criss-Cross Pattern
To take learning a step farther, you can explain to kids why we make the criss-cross pattern on peanut butter cookies. This tradition started in 1932 and is done when the cookie dough is dense and unlikely to spread. The criss-cross pattern flattens the cookie leading to more even baking.
Baking Mat
I got this cute pink baking mat at IKEA years ago, but you can find a similar one on Amazon here.
