Make it Ahead

Prepare the casserole and place it in the refrigerator up to a day ahead. Bake it just before serving.

Yield

This recipe is written for our baking classes where kids take home enough to feed a family a four, using an 8x8 pan. You can also double the recipe and put it in a 9x13 pan, as pictured.

Preheat your oven to 375°F (190°C). Spray an 8x8 pan with cooking spray.

In a large mixing bowl, combine all the ingredients except the parmesan cheese and stir until all ingredients are well-coated.

Transfer the mixture to the baking pan and spread it evenly.

Sprinkle the top with parmesan cheese.

Bake for 35 - 40 minutes or until the top is bubbly and golden brown.

Once done, remove from the oven and let the casserole rest for 5 minutes before serving. Enjoy!

Instructions

2 cups baby spinach leaves

1 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 teaspoon dried Italian herbs

2 cups cooked shredded chicken

2 garlic cloves minced

8oz dry orzo

1/2 cup heavy cream

1/4 cup lemon juice

1/2 tsp cracked pepper

1/4 tsp salt

1 1/2 cups chicken broth
