Recipes to Make with Kids: Chocolate Chip Cookie Pie

Although cookie shops are everywhere these days, baking a cookie at home and eating it warm right out of the oven just can't be beat.

Here's an easy recipe from Itty Bitty Bakers teacher Sarah Eubanks!


Chocolate Chip Cookie Pie

Ingredients:

1 pie crust, such as this one from Aldi

2 eggs

½ cup all-purpose flour

¼ cup brown sugar

¼ cup granulated sugar

2 teaspoons vanilla extract

1 ½ sticks (12 tablespoons) butter, softened

2 cups mini semi-sweet chocolate chips

⅔  cup sweetened condensed milk


Directions:

  1. Preheat the oven to 325 degrees F. Grease a 9-inch pie plate.

  2. Using an electric mixer, beat the eggs in a medium bowl until foamy, about three minutes.

  3. Add the flour, brown sugar, sugar, and vanilla, beat until combined. Add the butter and continue beating until combined (dough will be thick).

  4. Stir in the chocolate chips.

  5. Press pie crust into the prepared pie plate. Drizzle half of the sweetened condensed milk over the bottom of the crust. Spoon in half the dough. Drizzle the remaining sweet milk over the top. Spoon in the rest of the dough.

  6. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean. Allow to cool to ooey-gooey warm, then enjoy!
