Recipes to Make with Kids: Oreo Pound Cake

True or false: Cake must have frosting to taste good? If you think the answer is true, you haven't tried this Oreo Pound Cake yet. With its rich vanilla flavor and soft texture from sour cream - you never miss any frosting.



Oreo Pound Cake Recipe


Ingredients:


  • 1 stick unsalted butter, melted and cooled

  • 1 ⅔ cups unbleached all- purpose flour

  • 2 teaspoons baking powder

  • ¾ teaspoon salt

  • 4 large eggs, room temperature

  • 1 ½ cups sugar

  • 2 teaspoons pure vanilla paste or extract

  • ¾ cup sour cream, room temperature

  • 10 Oreos, crushed


Directions:


  1. Preheat oven to 350°F. Spray a loaf pan with non-stick cooking spray. Line with parchment paper, leaving a 2-inch overhang along the sides. Spray the parchment paper inside the pan with more cooking spray.

  2. Whisk by hand flour, baking powder, and salt.


  3. Combine eggs and sugar and beat with whisk attachment on high speed until thick and pale, about 4 minutes.

  4. Add flour mixture; beat just to combine. Add butter and vanilla; beat to combine. Add sour cream; beat until smooth.

  5. Scrape batter into prepared loaf pan, smoothing top with a spatula. Sprinkle with cookie pieces. Bake for 55 minutes or until tester inserted in center comes out clean.

  6. Let cool in pan on a wire rack 10 minutes. Using parchment overhangs, lift out of pan and let cool completely on rack.


Makes 8 slices
